HEAD CHEF 2022-2023

As part of the launch team and head of operations for Larb, I was responsible for upholding the high standards of service, beverages, and food. Larb embodies the celebratory eating culture of Isan, where locals mark significant events, such as weddings, by preparing elaborate meals using every part of the animal—from head to tail. This joyful tradition of Isan culinary culture is reflected in our offerings.

We regularly hosted feasts, featuring roasted whole pigs, grilled whole cows, and hot pots with fresh, locally sourced fish. One of the key challenges in this role was working directly with local farmers, as the availability of ingredients fluctuated with the seasons. This role was a rewarding accomplishment, allowing me to connect deeply with local traditions while maintaining an exciting, high-quality dining experience.
