I took my passion for cooking into the kitchen right after graduating from university, starting my journey at BAA/GA/DIN, a modern Thai restaurant owned by Chef Ton of Le Du and Chef Chandler. This is where I laid the foundation for my future in modern Thai cuisine. I developed essential kitchen skills such as knife techniques, ingredient handling, and understanding kitchen culture.
At BAA/GA/DIN, I was introduced to molecular gastronomy techniques like foaming, pressure cooking, sous-vide, and the use of binding agents. I also learned how to deconstruct and assemble new, Thai-inspired dishes, which shaped my approach to creating innovative, modern cuisine.
