CDP 2018-2019

Issaya Siamese Club is the flagship restaurant of Chef Ian Kittichai, serving modern Thai cuisine. Handling 200-300 customers per day, I learned how to efficiently work in a large kitchen with a small, dedicated team, all while delivering a fine dining experience. Time management and team coordination were essential to ensuring smooth service and high-quality dishes under the pressure of high demand.

As a Chef de Partie (CDP), I had the unique opportunity to collaborate closely with Chef Ian and several renowned guest chefs from around the world, including Chef Henrik from Kiin Kiin, Chef David from Nahm, Chef Masahito from Azur et Masa Ueki, Chef Riley from Canvas, and many more. These experiences enriched my culinary knowledge and further developed my skills in modern Thai cuisine and global culinary techniques.
